🍰🍋Mini lemon cakes🍰🍋

Good morning! It’s Friday and the weekend is near… yay! ⭐️

I’ve been back at it with the baking and this time will be showing you my mini lemon cakes and how to make them. This recipe is one of Mary Berry’s for lemon cupcakes. I thought I’d change it up a bit though and rather than make the standard cupcake, I wanted to make mini buttercream cakes instead… really pushing the boat out!

Ingredients:

For the cake mixture:

  • Unsalted butter (125 grams)
  • Self- raising flour (125 grams)
  • Caster sugar (125 grams)
  • Milk (2 tablespoons)
  • 2 eggs
  • Zest of 1 lemon

For the buttercream:

  • Unsalted butter (125 grams)
  • Icing sugar (250 grams)
  • Lemon juice (1 lemon)

So first I preheated my oven to 140 degrees, (I have a fan oven), and lined my muffin tin with 12 cupcake cases. For normal cupcakes usually I would bake at a higher temperature but to get that flatter surface on the top of your cakes it is better to bake at a lower temperature for longer. After that I softended my butter slightly, ( so it was easier to mix), and added it into a mixing bowel with all of the other ingredients. I actually added more lemon zest to the mixture than the recipe said as I lurvee lemon and can’t get enough! Once the mixture was smooth I divided the mixture into the cupcake cases and put them into the oven. They took around 20- 25 minutes to fully cook.

After the cakes had cooled down I cut through the middle so that I had two evenish… pieces of cake. These make the two layers of the mini cakes.

To make the icing I softended the butter and added the sifted icing sugar and lemon juice gradually. I used a fork to beat the buttercream. It is definitly best to add the lemon juice gradually and not right at the end as it really does make the consistency a lot thinner and you need the icing sugar to thicken it up. I used a spoon to scoop the butter cream onto one layer of cake and placed the other halve on top. To finish these mini delights off I simply sifted some icing sugar on top!

These cakes are definitly a lemon lovers dream!
