I’ve been back at the baking and this time I’ve made millionaires shortbread for the first time and they turned out so yummy!
For the shortbread:
Plain flour (250 grams)
Caster sugar (75 grams)
Softened butter (175 grams)
For the caramel filling:
Butter (100 grams)
Light muscovado sugar (100 grams)
Condensed milk (1 can/ 397 grams)
For the chocolate topping:
To start with I preheated my oven to 160 degrees and lined my tin with baking paper. I then started to make the shortbread by mixing the flour, sugar and butter together. I rubbed in the butter a small bit at a time until the mixture became like a breadcrumb texture. Then I kneaded the mixture together till it formed a dough, (my favourite bit!), and pressed it into my baking tin.
I pricked the shortbread all over with a fork and baked it for around 25 minutes until it looked a golden kinda colour on the top and the middle felt firm to touch.
To make the caramel I added the butter, muscovado sugar and the condensed milk to a saucepan on a low heat. I kept stirring until all of the sugar had dissolved and added the vanilla extract. Then I turned up the heat to medium and continuously stirred until it thickened and there were no lumps. I was so proud of how the caramel turned out and I think it’s the best caramel I’ve made! When I made caramel before I wasn’t stirring enough and so the texture became grainy where it was catching on the bottom of the pan but this time it didn’t… yay! Am I now a caramel master or was it luck???
Once the shortbread cooled I poured the caramel on top and then put it into the fridge for it all to fully set.
Finally to make the chocolate top is really easy. I just melted some milk chocolate in a saucepan and poured this over the firm caramel. I then melted a small amount of white chocolate and dotted in on top of the milk chocolate and with a knife swirled it around to kind of get a marble effect.
Ta da! And here are my mini millionaire shortbread bites! I loved them and definitely will be making them again with how easy they were! These bite sized ones were perfect for me and were great for sharing with family. They lasted a few days in the fridge which made them perfect for those times you open the fridge wanting a snack and don’t know what to grab… which is pretty much everyday for me 😅
